Summer Squash Lasagna


I improvised a lasagna made from summer squash, it turned out so good I just had to share it.

Ingredients:

2 summer squash, thinly slice lengthwise
2 TBS Olive oil
3 skinless, boneless chicken breasts chopped to bite size chunks
1 medium size onion
2 cloves garlic
1 small jalapeno
1 package frozen spinach
2 cups marinara sauce
10 oz Ricotta cheese
Shredded mozerella cheese

Finely chop the onion, pepper and garlic, sautee in olive oil until onion & garlic begins to carmelize. Add cut up chicken and cook thouroughly. Cook spinach and add to chicken mixture.

In an oiled 9" X 13" pan layer the sliced summer squash. Layer the chicken and spinach mixture over the squash. Layer in the Ricotta cheese, sauce and mozeralla. Repeat layers again ending with mozerella on top, use an ample amount.

Cover and bake in 375 preheated oven for 50 minutes. Uncover and bake for another 10 minutes. Remove, cool slightly and serve. Goes great with Garlic Texas Toast and a glass of red wine!

Humus


No I am not asking you to hum us a few bars of that song you once knew.

Tonight I made humus from scratch and wanted to share the recipe.

As you may know humus is made from chickpeas.

  • Take a can of chickpeas, also called garbanzo beans. Rinse under a water flush
  • Put the peas in a blender or food-processor
  • Add 1/2 C. of lime or lemon juice (I used lime as I had no lemon)
  • Let it turn for a while. Until it is “creamy”
  • Add 1/2 C. olive oil
  • Let the mixer turn until the cream is “perfect”. While it turns:
  • Prepare four big garlic cloves (two cloves are enough for most people) I love garlic, I used 4
  • Stop the blender, crunch the garlic with a garlic-cruncher on top of humus, wait 2-3 min for garlic to “mature”, and mix again
  • Serve it cold!

    I used it as a spread on my talapia filet, delicious!

    Sausage Fingers

    I went out for a run yesterday with our dog Jocelyn, which I have done a few times now, but I will no longer do.
    About half mile into the run she got spooked by someone walking towards us and ran underneath my feet.
    Falling forward I tried to splay my hands out in front of me but my right hand didn't make it.
    I landed on my hand with fingers pointed down. My 190 lb. body bent my fingers backwards on my hand in excruciating pain.
    Even now, a day later, my fingers and hand are bruised and swollen, and I can't make a fist. I am 99% sure there are no broken bones, but the sausage fingers are annoying me, and I am constantly thinking about breakfast.
